Flour-less Healthy MOIST Brownies
For the brownie and chocolate lovers out there this recipe is protein packed, GLUTEN FREE and sugar free and oh so tasty! I love the moistness of these brownies. Hard to let them cool down before I'm taking a bite.
1 1/2 Cups of baked (I put in microwave for 10 minutes) sweet potato
1 Cup Peanut Butter (can use any nut butter)
4 Heaping TBSP Cacao
1/4 Cup Grade B Maple Syrup (can add a little more if sweet potato is lacking moistness)
1 Scoop Protein Powder
Mix these ingredients together until smooth and creamy batter consistency.
1 large egg
1 tsp baking soda
Mix and place batter in sprayed (Pam) 8 x 8 baking pan and place in 350 degree oven for 25 minutes. If want a more chocolate molten cake taste you can add 1/2 cup sugar free or ENJOY LIFE SEMI-SWEET mini chocolate chips.
1/2 Cup Enjoy Life Semi-Sweet Chocolate Chips
2 TBSP Unrefined Coconut Oil
Melt in microwave for 30 seconds then drizzle over top of brownies.
*I like to keep the sugar grams low so I rarely add the topping.
After I let it cool then cut into 8 slices (like a pie) and wrap in plastic wrap. Place in container with lid then into the fridge. So yummy warm or cold. ENJOY!
