Amazing Gluten Free Protein Banana Bread

This recipe is so moist and flavorful! I took one of my girl friends family recipes that I loved and made it a healthier version.

Recipe:

6 Very Ripe Bananas (mashed)

1 1/2 Cups Unrefined Coconut Palm Sugar

1/2 tsp. Salt

2 Eggs

1/2 Cup Unsalted Butter (soft-room temp or melted)

Mix all above ingredients well then add-

2 tsp baking soda- dissolve in 2 TBSP water

3 Cups Gluten Free Flour

Stir in flour but do not over mix (will have chewy bread if over mix)

Spray 2 loaf pans with Pam Cooking spray and divide mixture as evenly as possible. Bake in 350 degree oven for 35-40 minutes. Should be firm to touch when ready to take out.
