Melt in your mouth peanut butter protein cookies that are gluten free and processed sugar free.....

Preheat oven 350 degrees.

You can use any nut butter of choice in these easy to make healthy cookies.

Grab a large bowl and add the following ingredients in order as listed.

2 cups All Natural Peanut Butter

2 cups sucanat sugar (unprocessed cane sugar with all the minerals still inside-a richer flavor your body will recognize this whole food)

1 tsp. vanilla

Cream the above ingredients together then add...

4 eggs

mix together until smooth and creamy

1 tsp baking soda

2 scoops chocolate protein powder- I used Advocare Lean Mass protein whey

mix until cookie dough consistency and then add...

1 cup large chocolate chips

1/2 cup mini chocolate chips

I used Lily's sugar free chocolate chips another brand that I like is Ghiradelli or the gluten free brand.

I used a large cookie scoop and scooped 8 balls of dough onto a 11 X 13 cookie sheet pan with a baking liner (which you do not need to have). Then bake for 10 minutes and take out of oven.

Let them cool for at least 10 minutes before eating one if you can handle it. the longer they sit and cool the more they come to true form and are amazing chewing cookies that just melt in your mouth.

I noticed as they cooled that people around couldn't wait to eat so the first tray of cookies was gone and it did not matter that they were falling apart and eaten with a fork on a plate. Those babies were going to be eaten one way or another. HA I put the remainder 9of the cookies in a container with a lid and placed in fridge after about an hour of cooling.

some protein powders that are vegan or have casein in them will dry out the cookies and so you can add 1/4 cup coconut oil or an additional egg to make them more moist.
