Coconut Protein Balls
So easy to make and packed with protein. this recipe is high in fiber and can be made low carb if you want to use sugar free maple syrup.
Add all ingredients in a bowl.
1 cup vanilla protein powder
1/2 cup shredded unsweetened coconut
1/2 cup almond flour( can omit and add 1/2 cup more protein powder or shredded coconut)
1/3 cup grade B maple syrup or sugar free
1/3 c unrefined coconut oil
1 tsp vanilla
pinch of sea salt
Mix ingredients with rubber spatula into cookie dough consistency and scoop into balls and put in air tight container and place in your fridge or freezer.
tip: some protein powders absorb more liquid so add a little water if need to. It should be like cookie dough consistency.
