Delicious Peanut Butter Chip Cookies rolled in Chocolate and Nuts
A recipe from my childhood that I wanted to taste more like a Peanut Butter Cup so I added a few things.
Recipe:
1/2 cup soft butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
*Cream above ingredients together until smooth
ADD:
1 egg
1tsp. vanilla
*mix until fully combined
ADD:
1 1/4 cup flour
1/2 tsp baking powder
3/4 tsp baking soda
1/4 teaspoon salt
*Mix until cookie dough consistency.
ADD:
1/2 bag Reese's peanut butter chips (can add more if like)
*mix in with dough, then take small cookie scoop and scoop dough onto parchment paper lined cookie sheet. Bake at 350 degrees for 10-12 minutes.
Take out of oven and let cool.
Pour 1/2 bag of chocolate chips into a bowl with 1 TBSP of coconut oil or butter and put in microwave for 1 minute. Take out and stir. Should be creamy with no lumps. Set aside.
Use a food processor or coffee grinder to chop up roasted peanuts. About 1 cup of nuts. Pour onto a small plate.
When cookies have cooled down roll them like a wheel in the chocolate and then right after into the chopped nuts. Set back on Parchment paper to become more solid. After about 15-20 minutes put cookies in an air tight container with a lid and place in fridge. Enjoy!
