Healthy Chocolate Pudding

This recipe came from one of my favorite recipe bloggers and so I want to give her the credit for this yummy healthy recipe.


2 cups milk of choice OR canned coconut milk

1/8 tsp of salt

1/4 cup cacao Powder

1/3 cup maple syrup or honey- can also use no calorie sweetener

1/2 cup of milk if choice plus 3 TBSP of cornstarch

1 tsp pure vanilla

3.5 oz. chocolate chips or broken up chocolate bar- I use Lily’s chocolate chips.


Heat the 2 cups of milk of choice in a saucepan with salt, cacao powder and sweetener. Meanwhile, whisk the cornstarch and 1/2 cup milk of choice in a small bowl until dissolved. When the two cups are warm, add the cornstarch mixture and bring to a boil. Once boiling, stir constantly for 2 minutes. Lower to a simmer for an additional minute, then turn off the heat. Once the heat the heat is off stir in the vanilla and broken up chocolate pieces until the chocolate melts. Transfer the pudding into the refrigerator to thicken. It thickens as it cools.
