A peanut butter lovers dream protein bar.
I wanted to make fresh homemade healthy peanut butter protein bars that had sugar free white chocolate drizzled on top so I came up with this recipe.
They can be cut into bite size protein snacks for a little sweet tooth moment during the day.
That is one of my favorite ways to eat these.
Recipe:
Line a 9 X 9 pan with wax paper and pour in:
2 cups of roasted peanuts to cover the entire bottom of pan.
In bowl mix together:
2 cups Orgain peanut butter protein powder
1 cup PB2 peanut butter powder
1/4 unrefined coconut oil
1/2 cup all natural peanut butter
Mix these ingredients well. It will still be a little dry.
Then add:
2/3-1 cup of coconut or almond milk. Start with 1/2 cup then add and mix in what you need to make it feel and look like cookie dough consistency.
Take clumps of this dough and press evening over peanuts in pan with hands.
Lastly -Cut into bars and drizzle Lily's sugar free white chocolate that has been melted in microwave (1 cup of chocolate with 1 TBSP of coconut oil that has been melted in microwave for 45-60 seconds).
Pull on wax paper to take out of pan carefully and place bars in airtight refrigerator container and place in fridge. Enjoy!
